Vegans in Europe

We will probably have a couple of vegans on our next tour to Europe. Has anyone had any experience with making sure that these students are accommodated? The parents are concerned about the availability of vegan choices while we are there. Our itinerary includes Germany, Austria and the Czech republic. Would appreciate any feedback you may have.
